Instructions
In a medium-sized bowl, combine the coconut milk, chia seeds, honey (or maple syrup), and vanilla extract. Whisk together until well blended.
Cover the bowl and refrigerate for at least 4 hours or overnight, allowing the chia seeds to absorb the liquid and create a pudding-like consistency.
Once the chia pudding has set, take it out of the fridge and stir well to break up any clumps.
To assemble the parfait, start by spooning a layer of chia pudding into the bottom of a glass or bowl.
Add a layer of sliced banana, followed by a layer of pineapple chunks.
Spoon another layer of chia pudding on top of the fruit, then add a layer of diced mango.
Repeat the layers until the glass or bowl is filled, finishing with a layer of chia pudding on top.
Sprinkle the toasted or untoasted shredded coconut over the top for added texture, and garnish with fresh mint leaves.

Adjust sweetness to taste with honey or maple syrup.
