2 whole sea bream (about 1-1.5 lbs each), cleaned and scaled

2 large carrots, sliced into thin rounds

1 zucchini, sliced into half-moons

1 bell pepper (red or yellow), sliced

1 red onion, cut into wedges

4 cloves garlic, minced

1 lemon, thinly sliced

4 tablespoons olive oil

1 teaspoon dried thyme

1 teaspoon smoked paprika

Salt and pepper to taste

Fresh parsley for garnish

Preheat your oven to 400Β°F (200Β°C).

    In a large roasting pan, toss together the sliced carrots, zucchini, bell pepper, red onion, and minced garlic with 2 tablespoons of olive oil, salt, pepper, and smoked paprika. Spread them evenly across the pan.

      Rinse the sea bream under cold water and pat them dry with paper towels.

        Use the remaining 2 tablespoons of olive oil to rub the outside and inside of the fish. Season generously with salt, pepper, and thyme, both inside and out.

          Stuff the cavity of each sea bream with a few slices of lemon.

            Place the seasoned fish on top of the arranged vegetables in the roasting pan.

              Roast in the preheated oven for about 25-30 minutes, or until the fish is cooked through (the flesh should flake easily with a fork) and the vegetables are tender.

                Once done, remove the pan from the oven and let it rest for about 5 minutes before serving.

                  Garnish with fresh parsley before serving.
