1 pound (450g) boneless, skinless chicken breasts, cut into bite-sized pieces

1 cup all-purpose flour

2 large eggs

1 tablespoon Dijon mustard

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon smoked paprika

1 teaspoon dried thyme

1 cup breadcrumbs (preferably panko for extra crunch)

Salt and pepper to taste

Cooking spray (for a crisp finish)

Prepare the Chicken: In a mixing bowl, combine the chicken pieces with salt, pepper, and half the garlic powder. Toss to coat evenly.

    Set Up Breading Station: In three separate shallow bowls, set up your breading station. In the first bowl, place the flour. In the second bowl, whisk the eggs together with the Dijon mustard, remaining garlic powder, onion powder, smoked paprika, and dried thyme. In the third bowl, add the breadcrumbs.

      Bread the Chicken: Take each chicken piece and first coat it in the flour, shaking off any excess. Then, dip it into the egg mixture, allowing any excess to drip off. Finally, roll it in the breadcrumbs until fully coated.

        Preheat Air Fryer: Preheat your air fryer to 400°F (200°C) for about 5 minutes.

          Air Fry the Nuggets: Lightly spray the basket of the air fryer with cooking spray. Place the breaded chicken nuggets in a single layer in the basket, making sure they are not overcrowded. You may need to do this in batches. Spray the top lightly with cooking spray for an extra crispy finish.

            Cook: Air fry the nuggets for 10-12 minutes, flipping them halfway through, until they are golden brown and cooked through (internal temperature should reach 165°F or 74°C).

              Serve: Once cooked, remove the nuggets from the air fryer and let them cool slightly. Serve warm with your favorite dipping sauces like honey mustard, ranch, or barbecue sauce.
