3 cups cooked rice (preferably day-old)

1 cup mixed vegetables (peas, carrots, corn)

2 large eggs, beaten

3 tablespoons soy sauce

2 tablespoons sesame oil

1 tablespoon olive oil

1 teaspoon garlic powder

1 teaspoon onion powder

2 green onions, chopped

Salt and pepper to taste

Instructions
 

Begin by preheating your air fryer to 375°F (190°C).

    In a large mixing bowl, combine the cooked rice, mixed vegetables, garlic powder, onion powder, sesame oil, and soy sauce. Gently mix until fully incorporated and rice is well-coated.

      In a separate bowl, whisk the beaten eggs with a pinch of salt and pepper.

        Add the olive oil to the air fryer basket. Pour in the rice mixture and spread it evenly.

          Create a small well in the center of the rice, pour the beaten eggs into the well, and let them cook for 2 minutes undisturbed.

            After 2 minutes, gently stir the mixture to combine the eggs with the rice and vegetables.

              Continue to air fry for another 5-7 minutes, stirring halfway through, until the rice is crispy and golden brown.

                Once cooked, remove the fried rice from the air fryer and mix in the chopped green onions.
