In a large mixing bowl, combine the rolled oats, almond butter, and honey (or maple syrup). Stir until well mixed.
Add the shredded coconut, dark chocolate chips, chopped almonds, vanilla extract, and a pinch of sea salt. Mix until all ingredients are fully incorporated.
Using your hands, take small portions of the mixture (about 1 tablespoon each) and roll them into bite-sized balls. You should have around 15-20 bites.
Place the energy bites on a parchment-lined baking sheet.
Refrigerate for at least 30 minutes to allow the bites to firm up.
Once set, transfer the Almond Joy Energy Bites to an airtight container and store in the fridge.
