1 ½ cups graham cracker crumbs

½ cup unsalted butter, melted

2 tablespoons granulated sugar

3 (8-ounce) packages cream cheese, softened

1 cup granulated sugar

1 tablespoon vanilla extract

3 large eggs

¾ cup sour cream

½ cup almond paste, crumbled

2 tablespoons almond extract

1 teaspoon lemon zest

¼ teaspoon salt

Sliced almonds and whipped cream for garnish

Preheat your oven to 325°F (160°C). Grease a 9-inch springform pan and wrap the bottom in aluminum foil to prevent leaks.

    In a bowl, combine graham cracker crumbs, melted butter, and 2 tablespoons of sugar. Mix until the crumbs are evenly coated.

      Press the mixture firmly into the bottom of the prepared springform pan to form a crust. Bake in the preheated oven for 10 minutes. Remove and allow to cool.

        In a large mixing bowl, beat the softened cream cheese until creamy and smooth using an electric mixer. Gradually add 1 cup of sugar, beating until fully incorporated.

          Add the vanilla extract, eggs (one at a time), and sour cream, mixing until just combined but not overmixed.

            Gently fold in the crumbled almond paste, almond extract, lemon zest, and salt until evenly distributed throughout the batter.

              Pour the cheesecake batter over the cooled crust in the springform pan. Tap the pan lightly on the counter to remove any air bubbles.

                To create a water bath, place the springform pan into a larger roasting pan and fill it halfway with hot water. Bake in the oven for 55-60 minutes, or until the center is set but still has a slight jiggle.

                  Once baked, turn off the oven, slightly crack the oven door, and let the cheesecake cool in the oven for 1 hour to prevent cracking.

                    After cooling, refrigerate the cheesecake for at least 4 hours, preferably overnight before serving.

                      Before serving, garnish the cheesecake with sliced almonds and dollops of whipped cream for an elegant touch.
