2 cups elbow macaroni

1 cup mayonnaise

1 tablespoon apple cider vinegar

1 tablespoon Dijon mustard

1 tablespoon sugar

1 teaspoon onion powder

1 teaspoon garlic powder

1 cup diced celery

1 cup diced bell pepper (red or yellow)

1/2 cup finely chopped red onion

1/2 cup sweet pickle relish

Salt and black pepper to taste

2 boiled eggs, chopped (optional)

Fresh parsley for garnish

Instructions
 

Cook the elbow macaroni in a large pot of salted boiling water until al dente, about 7-8 minutes. Drain and rinse under cold water to cool.

    In a large mixing bowl, combine the mayonnaise, apple cider vinegar, Dijon mustard, sugar, onion powder, and garlic powder. Mix well until smooth.

      Add the cooled macaroni to the dressing and stir to coat evenly.

        Fold in the celery, bell pepper, red onion, and sweet pickle relish. If using, add the chopped boiled eggs.

          Season the salad with salt and black pepper to taste. Mix until all ingredients are well incorporated.

            Cover the bowl with plastic wrap and refrigerate for at least 2 hours, allowing the flavors to meld together.

              Before serving, give the salad a good stir and adjust seasoning if necessary. Garnish with fresh parsley.
