1 cup unsalted butter, softened

1 cup granulated sugar

1 cup packed brown sugar

2 large eggs

2 teaspoons vanilla extract

2 ½ cups all-purpose flour

¾ cup unsweetened cocoa powder

1 teaspoon baking soda

½ teaspoon salt

1 cup Andes mint baking chips (or chopped Andes mints)

½ cup semi-sweet chocolate chips

½ cup chopped walnuts (optional)

Extra Andes mints for topping (optional)

Preheat the Oven: Preheat your oven to 350°F (175°C) and line two baking sheets with parchment paper.

    Mix Wet Ingredients: In a large bowl, beat the softened butter, granulated sugar, and brown sugar together until creamy and well combined. This should take about 2-3 minutes. Add in the eggs one at a time, followed by the vanilla extract, mixing well after each addition.

      Combine Dry Ingredients: In a separate bowl, whisk together the all-purpose flour, cocoa powder, baking soda, and salt.

        Combine Mixtures: Gradually add the dry ingredients to the wet mixture, mixing until just combined. Be careful not to overmix.

          Fold in Chocolates: Gently fold in the Andes mint baking chips, semi-sweet chocolate chips, and walnuts (if using) until evenly distributed in the dough.

            Scoop the Dough: Using a cookie scoop or tablespoon, drop dough balls onto the prepared baking sheets, spacing them about 2 inches apart.

              Bake the Cookies: Bake in the preheated oven for 10-12 minutes or until the edges are set but the centers are still slightly soft. They will continue to firm up as they cool.

                Add Toppings: If desired, immediately press a small piece of an extra Andes mint onto the top of each cookie right after removing them from the oven for a beautiful and minty garnish.

                  Cool and Serve: Allow the cookies to cool on the baking sheet for 5 minutes before transferring them to wire racks to cool completely.
