Ingredients

2 large flour tortillas

1 cup cream cheese, softened

1/2 cup powdered sugar

1 teaspoon vanilla extract

1 teaspoon cinnamon

2 large apples, peeled, cored, and diced (e.g., Granny Smith or Honeycrisp)

1 tablespoon lemon juice

1/4 cup brown sugar

1/4 teaspoon nutmeg

1/2 cup granola or crushed graham crackers

Whipped cream, for serving

Fresh mint leaves, for garnish (optional)

Instructions

Prepare the Apples: In a medium bowl, toss the diced apples with lemon juice, brown sugar, cinnamon, and nutmeg. Let them sit for about 10 minutes to macerate and release their juices.

Make the Cheesecake Filling: In a mixing bowl, beat the softened cream cheese until smooth. Gradually add powdered sugar and vanilla extract, mixing until creamy and well combined.

Assemble the Tacos: On each tortilla, spread a generous amount of the cream cheese mixture. Add a portion of the macerated apples on top, followed by a sprinkle of granola or crushed graham crackers for added crunch.

Fold and Warm Tacos: Gently fold the tortillas in half to create taco shapes. If desired, warm them slightly in a skillet over medium heat for 1-2 minutes on each side until they are just soft and warm, but not crispy.

Serve: Place the tacos on a platter. Top each one with a dollop of whipped cream. Garnish with fresh mint leaves if desired.

Prep Time: 15 minutes | Total Time: 30 minutes | Servings: 2 tacos
