Instructions
Preheat your oven to 350°F (175°C) and grease a 9x9 inch baking dish.
In a large bowl, mix together the rolled oats, almond milk, maple syrup, applesauce, and vanilla extract until well combined.
Add in the peeled and diced apples, ground cinnamon, baking powder, and salt. Stir to combine.
If using, fold in the chopped walnuts and raisins or dried cranberries for added texture and sweetness.
Pour the mixture into the greased baking dish and spread it out evenly.
Bake in the preheated oven for 30-35 minutes, until the top is golden and the mixture is set.
Remove from the oven and let it cool for a few minutes before slicing.
Serve warm, drizzling with additional maple syrup if desired.
