Ingredients
  

2 large apples (such as Granny Smith or Honeycrisp), peeled and diced

1 tablespoon lemon juice

1 teaspoon cinnamon

1/4 cup brown sugar

1 cup rolled oats

1/2 cup all-purpose flour

1/3 cup granulated sugar

1/2 cup unsalted butter, melted

1/4 teaspoon salt

1/4 cup chopped walnuts (optional)

Vanilla ice cream or whipped cream (for serving)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini cupcake liners.

    In a medium bowl, combine the diced apples, lemon juice, cinnamon, and brown sugar. Toss until the apples are well-coated and set aside.

      In a separate bowl, mix together the rolled oats, flour, granulated sugar, melted butter, and salt. Stir until crumbly and well mixed, then fold in the chopped walnuts if using.

        Press about a tablespoon of the oat mixture into the bottom of each muffin cup, creating a small crust layer.

          Spoon the apple mixture evenly over the crusts, filling each muffin cup nearly to the top.

            Top the apple filling with the remaining oat mixture, gently pressing it down to create an even layer.

              Bake in the preheated oven for 18-20 minutes, or until the tops are golden brown and the apple filling is bubbly.

                Remove the muffin tin from the oven and allow the bites to cool for about 10 minutes before carefully removing them.

                  Serve warm, topped with a scoop of vanilla ice cream or a dollop of whipped cream if desired.
