2 medium-sized apples, peeled, cored, and diced (preferably Granny Smith)

1 cup all-purpose flour

1 tablespoon granulated sugar

1 teaspoon baking powder

1/2 teaspoon ground cinnamon

1 large egg

1 teaspoon vanilla extract

Prepare the Apples: Start by peeling, coring, and dicing your apples into small bite-sized pieces. Set them aside.

    Mix the Dry Ingredients: In a large mixing bowl, combine the all-purpose flour, granulated sugar, baking powder, ground cinnamon, and salt. Whisk these ingredients until they're fully combined.

      Combine Wet Ingredients: In another bowl, whisk together the milk, egg, and vanilla extract until smooth.

        Create the Batter: Pour the wet ingredients into the bowl with the dry ingredients. Stir until just combined—be careful not to overmix. Fold in the diced apple pieces gently until they are evenly distributed.

          Heat the Oil: In a deep frying pan or pot, heat about 2 inches of oil over medium heat until it reaches 350°F (175°C). You can test if the oil is ready by dropping a small amount of batter into it; it should sizzle and rise to the surface.

            Fry the Bites: Using a small cookie scoop or two spoons, drop small spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry them in batches for about 2-3 minutes on each side, or until they turn golden brown and crispy.
