2 medium apples (preferably Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

1/4 cup granulated sugar

1 tsp baking powder

1/2 tsp cinnamon

1/4 tsp nutmeg

1/4 tsp salt

1/2 cup whole milk

1 large egg

1 tsp vanilla extract

2 tbsp melted butter

Oil for frying

1 cup powdered sugar (for glaze)

2 tbsp milk (for glaze)

Extra cinnamon for dusting (optional)

Prepare the Apples: Start by peeling and dicing the apples into small, bite-sized pieces. Set aside.

    Make the Batter: In a mixing bowl, combine the flour, granulated sugar, baking powder, cinnamon, nutmeg, and salt. Whisk until well mixed.

      Combine Wet Ingredients: In another bowl, whisk together the milk, egg, vanilla extract, and melted butter until smooth.

        Mix Batter and Apples: Gradually pour the wet mixture into the dry ingredients, stirring until just combined. Gently fold in the diced apples. The batter will be thick.

          Heat the Oil: In a deep saucepan or dutch oven, heat about 2 inches of oil over medium heat (around 350°F or 175°C).

            Fry the Fritter Bites: Using a tablespoon, carefully drop spoonfuls of the batter into the hot oil, making sure not to overcrowd the pan. Fry until golden brown, about 2-3 minutes on each side. Remove with a slotted spoon and drain on paper towels.

              Prepare the Glaze: In a small bowl, mix the powdered sugar with the milk until smooth. Adjust the consistency with more sugar or milk as needed.

                Coat the Bites: While the fritter bites are still warm, dip or drizzle them in the glaze. Optionally, dust with extra cinnamon.

                  Serve: Allow the fritter bites to cool slightly before serving. Enjoy them warm for the best flavor!
