2 medium apples (Granny Smith or Honeycrisp), peeled and diced

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/2 teaspoon ground cinnamon

1/4 teaspoon salt

3/4 cup buttermilk (or regular milk with a splash of vinegar)

1 large egg

1 teaspoon vanilla extract

1/4 teaspoon nutmeg

Oil for frying (vegetable or canola)

1 cup powdered sugar (for icing)

2 tablespoons milk (for icing)

Extra cinnamon (for dusting, optional)

Prepare the Apples: In a medium bowl, toss the diced apples with a sprinkle of cinnamon and set aside to let the flavors mingle.

    Make the Batter: In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, ground cinnamon, nutmeg, and salt.

      Combine Wet Ingredients: In another bowl, mix the buttermilk, egg, and vanilla extract. Gradually add this wet mixture to the dry ingredients, stirring until just combined (don’t overmix!). Gently fold in the diced apples.

        Heat the Oil: In a deep skillet or pot, add about 2 inches of oil and heat over medium heat until it reaches 350°F (175°C). You can check the temperature with a deep-fry thermometer or drop a small amount of batter into the oil; it should sizzle immediately.

          Fry the Fritter Bites: Using a small cookie scoop or tablespoon, carefully drop small amounts of the batter into the hot oil.
