2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 teaspoon cinnamon

1 cup buttermilk (or milk mixed with 1 tablespoon vinegar)

1 large egg

2 tablespoons melted butter (plus more for cooking)

1 large apple (such as Granny Smith or Honeycrisp), peeled and diced

1/4 cup chopped walnuts (optional)

Maple syrup, for serving

In a large mixing bowl, whisk together the flour, sugar, baking powder, baking soda, salt, and cinnamon until well combined.

    In another bowl, mix the buttermilk, egg, and melted butter. Stir until combined.

      Pour the wet ingredients into the dry mixture and gently stir until just combined. Avoid over-mixing; some lumps are fine.

        Fold in the diced apple and chopped walnuts (if using) until evenly distributed throughout the batter.

          Heat a non-stick skillet or griddle over medium heat and add a small amount of butter to coat the surface.

            Once the butter is melted and bubbling, pour about 1/4 cup of the batter onto the skillet for each pancake.

              Cook until you see bubbles forming on the surface and the edges begin to look set, about 2-3 minutes.

                Carefully flip the pancake using a spatula and cook the other side until golden brown, about 2 more minutes.

                  Repeat the process with the remaining batter, adding more butter to the skillet as necessary.

                    Serve the pancakes warm, drizzled with maple syrup and a sprinkle of additional cinnamon if desired.
