2 medium apples (such as Granny Smith), cored and cut into rings

1 cup all-purpose flour

2 tablespoons sugar

1 teaspoon baking powder

1/2 teaspoon baking soda

1/4 teaspoon salt

1 cup buttermilk (or milk with 1 tablespoon vinegar added)

1 large egg

1 teaspoon vanilla extract

2 tablespoons unsalted butter, melted (plus more for cooking)

Cinnamon sugar (for sprinkling, optional)

Instructions
 

In a mixing bowl, whisk together the flour, sugar, baking powder, baking soda, and salt until well combined.

    In another bowl, whisk together the buttermilk, egg, vanilla extract, and melted butter until smooth.

      Pour the wet ingredients into the dry ingredients and gently fold until no dry flour remains. The batter should be slightly lumpy.

        Preheat a non-stick skillet or griddle over medium heat and add a little butter to grease the surface.

          Dip each apple ring into the pancake batter, ensuring both sides are coated. Let excess batter drip off.

            Place the battered apple ring onto the skillet and cook for about 2-3 minutes on one side, or until bubbles form and the edges look set.

              Flip the pancake ring using a spatula and cook for another 2-3 minutes until golden brown and cooked through. Repeat with remaining apple rings, adding more butter as needed.

                Remove the pancakes from the skillet and keep them warm in a 200°F (95°C) oven while you cook the rest.
