2 lb beef chuck, cut into 1-inch cubes

2 tablespoons vegetable oil

2 large onions, finely chopped

4 cloves garlic, minced

2 tablespoons sweet paprika

1 teaspoon smoked paprika

1 teaspoon caraway seeds

1 teaspoon ground black pepper

1 teaspoon salt (adjust to taste)

2 medium carrots, sliced

2 medium potatoes, diced

1 red bell pepper, chopped

1 (14 oz) can diced tomatoes

4 cups beef broth

2 tablespoons tomato paste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large heavy-bottomed pot or Dutch oven, heat the vegetable oil over medium-high heat.

    Add the beef cubes in batches, browning them on all sides. Remove the browned beef and set aside.

      In the same pot, add the chopped onions and sauté them until they become translucent and start to brown, about 5-7 minutes.

        Stir in the minced garlic and cook for another minute until fragrant.

          Sprinkle the sweet paprika, smoked paprika, caraway seeds, ground black pepper, and salt into the pot, stirring to combine with the onions and garlic. Cook for 1-2 minutes to toast the spices.

            Return the browned beef to the pot, along with the carrots, diced potatoes, chopped bell pepper, diced tomatoes, tomato paste, and beef broth.

              Stir everything together, bringing the mixture to a gentle boil. Once boiling, reduce the heat to low and cover the pot.

                Let the goulash simmer for about 1.5 to 2 hours, stirring occasionally, until the beef is tender and the flavors meld together. If it thickens too much, add a little more beef broth or water.

                  Taste and adjust seasoning if necessary before serving.
