Instructions
In a mixing bowl, combine the shredded chicken, mashed avocado, Greek yogurt, and Dijon mustard. Mix well until everything is fully combined.
Add the diced red onion, quartered cherry tomatoes, and chopped cilantro to the bowl.
Drizzle the lime juice over the mixture and season with salt and pepper to taste. Stir gently to combine, taking care not to mash the tomatoes.
Take a lettuce leaf and spoon about 1/4 cup of the avocado chicken salad mixture into the center.
Fold the sides of the lettuce over the filling and roll it up to form a wrap. Repeat with the remaining leaves and filling.
Arrange the lettuce wraps on a serving platter and garnish with extra cilantro and lime wedges if desired.
