8 slices of crispy bacon, chopped

1 cup breakfast sausage, crumbled

1 medium onion, diced

1 bell pepper (red or green), diced

1 cup baby spinach, chopped

8 large eggs

1 cup milk

2 cups cheddar cheese, shredded

1 teaspoon garlic powder

1 teaspoon paprika

Salt and pepper to taste

4 cups of cubed day-old bread (like sourdough or whole wheat)

Instructions
 

Preheat your oven to 350°F (175°C). Grease a 9x13-inch baking dish with cooking spray or olive oil.

    In a large skillet over medium heat, cook the chopped bacon until crispy. Remove with a slotted spoon and drain on paper towels. In the same skillet, add the crumbled breakfast sausage and cook until browned.

      Add the diced onion and bell pepper to the skillet and sauté until softened, about 4-5 minutes. Stir in the chopped spinach and cook until wilted, about 2 minutes. Remove from heat and let cool slightly.

        In a large mixing bowl, whisk together the eggs, milk, garlic powder, paprika, salt, and pepper until well combined.

          Add the cubed bread to the egg mixture and gently fold to ensure the bread is evenly coated.

            In the greased baking dish, layer the bread mixture, followed by the cooked bacon, sausage and veggie mixture, and finally, half of the cheddar cheese. Repeat with another layer, finishing with the remaining cheese on top.

              Pour any remaining egg mixture over the top, ensuring all the ingredients are submerged in the egg custard.

                Cover the dish with foil and bake in the preheated oven for 30 minutes. After 30 minutes, remove the foil and bake for an additional 15-20 minutes, or until the casserole is set and the cheese is bubbly and golden.

                  Allow the casserole to cool for 5-10 minutes before slicing and serving.
