2 cups all-purpose flour

1 tablespoon baking powder

1/2 teaspoon baking soda

1 teaspoon salt

1/2 cup cold unsalted butter, cubed

1 cup shredded sharp cheddar cheese

1 cup cooked bacon, chopped (about 6-8 slices)

3/4 cup buttermilk

1 tablespoon fresh chives, chopped (optional)

1 egg (for egg wash)

Instructions
 

Preheat your oven to 425°F (220°C) and line a baking sheet with parchment paper.

    In a large mixing bowl, whisk together the flour, baking powder, baking soda, and salt until well combined.

      Add the cubed cold butter to the dry ingredients. Using a pastry cutter or your fingers, mix until the mixture resembles coarse crumbs.

        Stir in the shredded cheddar cheese and chopped bacon until evenly distributed.

          Pour in the buttermilk and gently stir just until the dough begins to come together. Do not overmix; it’s okay if there are some lumps.

            Turn the dough out onto a lightly floured surface and knead it gently 2-3 times until it holds together. Pat it into a rectangle about 1-inch thick.

              Cut the dough into rounds using a biscuit cutter or a glass. Place the biscuits onto the prepared baking sheet.

                For a glossy finish, beat the egg and brush the egg wash over the tops of the biscuits.

                  Bake in the preheated oven for 12-15 minutes, or until they are golden brown on top and baked through.

                    Remove from the oven and let cool slightly. Serve warm, optionally garnished with fresh chives.
