2 filet mignon steaks (6 oz each)

4 slices of thick-cut bacon

2 tablespoons olive oil

Salt and freshly ground black pepper, to taste

2 sprigs of fresh rosemary (or 1 tsp dried rosemary)

2 cloves garlic, minced

A splash of red wine or beef broth (optional)

Optional garnish: fresh parsley, chopped

Instructions
 

Preheat the Oven: Preheat your oven to 400°F (200°C).

    Season the Steaks: Pat the filet mignon steaks dry with paper towels. Season both sides generously with salt and black pepper.

      Wrap with Bacon: Take two slices of bacon per filet, and wrap them around each steak, securing the ends with toothpicks if necessary.

        Sear the Steaks: In a large oven-safe skillet, heat olive oil over medium-high heat. Once hot, add the bacon-wrapped filets to the skillet. Sear each steak for about 3-4 minutes on each side until the bacon is crispy and browned.

          Add Garlic and Rosemary: Once the filets are seared, add the minced garlic and fresh rosemary to the skillet, stirring around the filets for about 1 minute until fragrant.

            Deglaze (Optional): If desired, add a splash of red wine or beef broth to the skillet to deglaze, scraping up any browned bits. This will add depth to the sauce.

              Bake to Perfection: Transfer the skillet to the preheated oven, and bake the filets for about 5-8 minutes for medium-rare or longer depending on your desired doneness.

                Rest Your Steaks: Remove the skillet from the oven, and let the filets rest for about 5 minutes. This allows the juices to redistribute and ensures maximum tenderness.

                  Serve: Remove the toothpicks if used, plate the steaks, and garnish with chopped parsley for a fresh touch. Serve with your favorite sides.
