1 fresh pineapple, peeled, cored, and cut into 1-inch cubes

10-12 slices of thick-cut bacon

1/4 cup brown sugar

1/4 teaspoon cayenne pepper (optional for heat)

Instructions
 

Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.

    In a small bowl, mix together the brown sugar and cayenne pepper. Set aside.

      Take a piece of pineapple and wrap it with a slice of bacon. Secure the bacon with a toothpick. Repeat this for all pineapple pieces.

        Place the bacon-wrapped pineapple pieces on the prepared baking sheet, making sure they are not touching each other.

          Sprinkle the brown sugar mixture generously over each bacon-wrapped piece.

            Bake in the preheated oven for about 20-25 minutes, or until the bacon is crispy and caramelized. Turn them halfway through to ensure even cooking.

              Remove from the oven and let cool for a few minutes before serving.
