Ingredients

200g (about 7 oz) of farfalle pasta (or pasta of your choice)

200g (about 7 oz) block of feta cheese

2 cups cherry tomatoes, halved

4 cloves garlic, minced

1/4 cup olive oil

1 teaspoon dried oregano

1/2 teaspoon red pepper flakes (adjust to taste)

Salt and pepper to taste

Fresh basil leaves, for garnish

Grated Parmesan cheese, for serving (optional)

Instructions

Preheat the Oven: Preheat your oven to 400°F (200°C). Line a baking dish with parchment paper for easy cleanup.

Prepare the Baking Dish: Place the block of feta cheese in the center of the baking dish. Surround it with the halved cherry tomatoes.

Add Flavorings: Sprinkle the minced garlic over the tomatoes and feta. Drizzle generously with olive oil, then add the dried oregano, red pepper flakes, salt, and pepper. Toss the tomatoes lightly to coat in the seasonings and oil.

Bake: Transfer the baking dish to the preheated oven and bake for 30-40 minutes, or until the tomatoes are bursting and the feta is golden and softened.

Cook the Pasta: While the feta and tomatoes are baking, cook the farfalle pasta according to package instructions in salted water until al dente. Drain and set aside, reserving about 1/2 cup of the pasta water.

Combine Ingredients: Once the feta and tomatoes are done baking, remove them from the oven. Using a fork, mix the melted feta and burst tomatoes together to create a creamy sauce. If it's too thick, gradually add the reserved pasta water until the desired consistency is reached.

Mix Pasta and Sauce: Add the cooked pasta directly to the sauce, and toss to combine. Make sure the pasta is well-coated with the creamy feta-tomato mixture.

Serve: Plate the baked feta pasta and garnish with fresh basil leaves and, if desired, a sprinkle of grated Parmesan cheese. Enjoy your delicious and unique baked feta pasta!
