Baked French Onion Soup

4 large yellow onions, thinly sliced

4 tablespoons unsalted butter

2 tablespoons olive oil

1 teaspoon sugar

4 cups beef broth (or vegetable broth for a vegetarian option)

2 cups water

1 teaspoon dried thyme

1 bay leaf

Salt and pepper to taste

1 French baguette, sliced into 1-inch pieces

2 cups shredded Gruyère cheese

1 cup shredded mozzarella cheese

Fresh parsley, chopped (for garnish)

Instructions
 

In a large pot, melt the butter and olive oil over medium heat. Add the sliced onions and sugar. Sauté the onions for about 25-30 minutes, stirring frequently, until they become caramelized and golden brown.

    Once caramelized, add the beef or vegetable broth, water, thyme, bay leaf, and season with salt and pepper. Bring to a gentle simmer and cook for an additional 15 minutes. Remove the bay leaf before serving.

      While the soup is simmering, preheat your oven to 400°F (200°C).

        Arrange the baguette slices on a baking sheet. Bake in the preheated oven for about 8-10 minutes or until the bread is lightly toasted.

          Ladle the hot soup into oven-safe bowls, and top each bowl with toasted baguette slices. Generously sprinkle both Gruyère and mozzarella cheese over the bread.

            Place the bowls on a baking sheet and bake in the oven for about 10-15 minutes or until the cheese is bubbling and golden brown.

              Once done, remove from the oven and let cool for a couple of minutes. Garnish with fresh parsley before serving.
