Ingredients

2 USDA Choice Ribeye steaks (about 1 inch thick)

1/4 cup soy sauce

2 tablespoons balsamic vinegar

1 tablespoon Worcestershire sauce

1 tablespoon Dijon mustard

2 cloves garlic, minced

1 tablespoon brown sugar

1 teaspoon black pepper

1 teaspoon smoked paprika

1 teaspoon dried thyme

1/4 cup olive oil

Fresh herbs (like rosemary or parsley) for garnish

Instructions

Prepare the Marinade: In a medium bowl, whisk together soy sauce, balsamic vinegar, Worcestershire sauce, Dijon mustard, minced garlic, brown sugar, black pepper, smoked paprika, thyme, and olive oil until well combined.

Marinate the Steaks: Place the ribeye steaks in a resealable plastic bag or a shallow dish. Pour the marinade over the steaks, ensuring they are completely covered. Seal the bag or cover the dish with plastic wrap. Refrigerate for at least 2 hours, preferably overnight for maximum flavor.

Preheat the Oven: When ready to cook, preheat your oven to 425°F (220°C) and prepare a baking sheet by lining it with aluminum foil for easy cleanup.

Bake the Steaks: Remove the steaks from the marinade and let any excess marinade drip off. Reserve the marinade for later use. Place the steaks on the prepared baking sheet and bake in the preheated oven for about 12-15 minutes for medium-rare, or adjust cooking time for your desired doneness. Use a meat thermometer: 130°F (54°C) for medium-rare.

Glaze the Steaks: While the steaks are baking, bring the reserved marinade to a boil in a small saucepan over medium heat. Reduce heat and simmer for about 5 minutes, until slightly thickened. Brush this glaze over the steaks during the last 5 minutes of baking for added flavor.

Rest and Serve: Once baked to your liking, remove the steaks from the oven and let them rest for 5-10 minutes before slicing. This allows the juices to redistribute. Slice against the grain, garnish with fresh herbs, and serve warm.
