Ingredients
  

4 ears of fresh corn, husked

1/2 cup mayonnaise

1/4 cup sour cream

1 teaspoon lime zest

2 tablespoons lime juice

1 teaspoon chili powder

1/2 teaspoon smoked paprika

1/2 cup crumbled Cotija cheese

1/4 cup chopped fresh cilantro

Salt and pepper to taste

Lime wedges, for serving

Instructions
 

Preheat your oven to 400°F (200°C).

    Place the husked corn on a baking sheet. Roast in the preheated oven for about 20-25 minutes, turning occasionally, until the corn is tender with some charred spots.

      In a mixing bowl, combine mayonnaise, sour cream, lime zest, lime juice, chili powder, smoked paprika, salt, and pepper. Mix until smooth and creamy.

        Once the corn is done roasting, remove it from the oven and let it cool slightly.

          While the corn is still warm, generously coat each ear with the mayonnaise mixture.

            Sprinkle the crumbled Cotija cheese and chopped cilantro evenly over the coated corn.

              Serve warm with lime wedges on the side for an extra zesty kick!
