Ingredients

2 salmon fillets (about 6 ounces each)

1 bunch of asparagus, trimmed

1 tablespoon olive oil

1 lemon, zested and juiced

2 cloves garlic, minced

1 teaspoon fresh dill, chopped

1 teaspoon fresh parsley, chopped

Salt and pepper to taste

Lemon slices for garnish

Instructions

Preheat your oven to 400°F (200°C).

Cut two large pieces of aluminum foil, large enough to wrap each salmon fillet and asparagus bundle. Place them on a baking sheet.

In a medium bowl, combine the olive oil, lemon zest, lemon juice, minced garlic, dill, parsley, salt, and pepper. Mix until well combined.

On each piece of foil, lay down the trimmed asparagus in the center. Drizzle half of the oil mixture over the asparagus.

Place one salmon fillet on top of the asparagus. Drizzle the remaining oil mixture over the salmon fillet and season with additional salt and pepper if desired.

Fold up the sides of the foil over the salmon and asparagus, creating a sealed packet. Make sure it is tightly closed to trap steam while baking.

Bake the foil packets in the preheated oven for about 15-20 minutes, or until the salmon flakes easily with a fork and the asparagus is tender.

Carefully unwrap the foil packets (watching for steam) and serve immediately, garnished with lemon slices and extra herbs if desired.
