Ingredients

4 salmon fillets

1 bunch of asparagus, trimmed

3 tablespoons olive oil

3 cloves garlic, minced

1 lemon, zested and juiced

1 teaspoon dried oregano

Salt and freshly ground black pepper, to taste

Fresh parsley, chopped for garnish

Instructions

Preheat your oven to 400°F (200°C).

Cut 4 pieces of aluminum foil, large enough to wrap each salmon fillet and asparagus.

In a small bowl, whisk together olive oil, minced garlic, lemon zest, lemon juice, oregano, salt, and pepper to create the lemon garlic sauce.

Lay a salmon fillet in the center of each piece of foil. Arrange a handful of asparagus next to the salmon.

Drizzle the lemon garlic sauce generously over both the salmon and asparagus.

Fold the sides of the foil over the salmon and asparagus, sealing tightly to form a packet. Ensure they are well sealed to trap steam for cooking.

Place the packets on a baking sheet and bake in the preheated oven for about 15-20 minutes, or until the salmon is cooked through and flakes easily with a fork.

Carefully open the foil packets, allowing steam to escape, and serve immediately.

Garnish with fresh chopped parsley before serving for an extra pop of color.
