Ingredients

1 pound large shrimp, peeled and deveined

1 cup cooked white rice

1 cup broccoli florets (fresh or frozen)

1 cup diced bell pepper (red or yellow)

1 small onion, finely chopped

2 cloves garlic, minced

1 cup shredded cheddar cheese

1 cup cream of mushroom soup (or homemade)

1 tablespoon Worcestershire sauce

1 teaspoon Old Bay seasoning

Salt and pepper to taste

1 cup panko breadcrumbs

4 tablespoons unsalted butter, melted

2 tablespoons fresh parsley, chopped (for garnish)

Instructions

Preheat the Oven: Preheat your oven to 350°F (175°C).

Cook the Shrimp: In a large skillet over medium heat, sauté the minced garlic and chopped onion until soft and fragrant, about 2-3 minutes. Add the shrimp to the skillet and cook until they turn pink, roughly 3-4 minutes. Season with Old Bay, salt, and pepper. Remove from heat.

Combine Ingredients: In a large mixing bowl, combine the cooked rice, broccoli florets, diced bell pepper, cream of mushroom soup, and Worcestershire sauce. Mix well. Fold in the sautéed shrimp and half of the shredded cheese. Pour this mixture into a greased 9x13 inch baking dish.

Prepare the Topping: In a small bowl, mix together the panko breadcrumbs and melted butter until the breadcrumbs are evenly coated. Sprinkle the remaining shredded cheese over the casserole, then evenly distribute the buttery panko topping over the entire surface.

Bake: Bake in the preheated oven for about 25-30 minutes, or until the casserole is bubbly and the top is golden brown.

Garnish and Serve: Let the casserole cool slightly before garnishing with fresh parsley. Serve hot and enjoy your delicious baked shrimp casserole!
