Ingredients

2 ribeye steaks (about 1 inch thick)

1 cup cherry tomatoes, halved

1 cup fresh mozzarella balls

1 cup fresh basil leaves

1/4 cup balsamic vinegar

2 tablespoons olive oil

2 cloves garlic, minced

Salt and pepper to taste

Optional: Crushed red pepper flakes for a spicy kick

Instructions

Marinate the Steaks: In a small bowl, whisk together the balsamic vinegar, olive oil, minced garlic, salt, and pepper. Place the ribeye steaks in a resealable plastic bag and pour the marinade over them. Seal the bag and refrigerate for at least 30 minutes (up to 2 hours for more flavor).

Prepare the Caprese Topping: In a mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and fresh basil leaves. Drizzle with a little olive oil and season lightly with salt and crushed red pepper flakes if desired. Toss gently to combine, then set aside.

Grill the Steaks: Preheat your grill to medium-high heat. Remove the steaks from the marinade and let any excess drip off. Place the steaks on the hot grill and cook for about 4-5 minutes on each side for medium-rare (internal temperature of 135°F). Adjust the time as needed for your preferred doneness.

Rest the Steaks: Once cooked to your liking, remove the steaks from the grill and let them rest for 5 minutes. This allows the juices to redistribute for a more flavorful bite.

Serve with Caprese: Slice the grilled steaks against the grain and plate them. Spoon the prepared cherry tomato and mozzarella mixture generously over the top of the sliced steak.

Garnish: Drizzle with a bit more balsamic vinegar for added flavor and finish with a few fresh basil leaves for garnish.
