Ingredients

4 slices of sourdough bread

1 cup sharp cheddar cheese, shredded

1 cup creamy goat cheese, softened

1/2 cup balsamic fig jam (store-bought or homemade)

2 tablespoons unsalted butter, softened

Fresh arugula, for garnish

Salt and pepper, to taste

Instructions

Prepare the Bread: Spread a thin layer of softened butter on one side of each slice of sourdough bread. This will help achieve a nice golden crust when grilled.

Assemble the Sandwich: On the unbuttered side of two slices of bread, spread a generous layer of balsamic fig jam.

Cheese Layering: Sprinkle half the cheddar cheese over the fig jam, followed by dollops of goat cheese. Add the remaining cheddar cheese on top, and lastly, place the other two slices of bread (buttered side out) on top to create a sandwich.

Grill the Sandwich: Heat a skillet or frying pan over medium heat. Carefully place the sandwich in the skillet and grill for about 4-5 minutes on each side until golden brown and the cheese is melted. Press down gently with a spatula to ensure an even grill.

Add Arugula: Once cooked, remove the sandwich from the pan and let it rest for a minute. Cut it diagonally and layer a handful of fresh arugula inside or on the side for a peppery contrast.

Season: Before serving, sprinkle lightly with salt and pepper to enhance the flavors.

Prep Time: 10 minutes | Total Time: 20 minutes | Servings: 2 sandwiches

                - Presentation Tips: Serve the grilled cheese on a rustic wooden board or a simple white plate. Drizzle a little extra balsamic fig jam around the plate for visual appeal and a touch of freshness.
