4 bone-in, skin-on chicken thighs

½ cup balsamic vinegar

¼ cup honey

2 tablespoons soy sauce

3 cloves garlic, minced

1 teaspoon dried rosemary

1 teaspoon dried thyme

Salt and pepper to taste

2 tablespoons olive oil

Fresh basil leaves for garnish

Optional: 1 cup cherry tomatoes, halved

Marinate the Chicken: In a bowl, whisk together balsamic vinegar, honey, soy sauce, minced garlic, rosemary, thyme, salt, and pepper. Place the chicken thighs in a large zip-top bag or dish and pour the marinade over them. Make sure the chicken is well coated. Seal the bag and refrigerate for at least 1 hour (or up to overnight for deeper flavor).

    Preheat the Oven: Preheat your oven to 400°F (200°C).

      Sear the Chicken: In a large oven-safe skillet, heat olive oil over medium-high heat. Remove chicken thighs from the marinade, reserving the marinade for later. Sear the chicken, skin-side down, for about 5-7 minutes until the skin is crispy and golden brown. Flip the chicken and sear the other side for an additional 3-4 minutes.

        Add Marinade and Roast: If using, toss cherry tomatoes into the skillet. Pour the reserved marinade over the chicken thighs and bring to a simmer. Then, carefully transfer the skillet to the preheated oven. Bake for 25-30 minutes, or until the chicken reaches an internal temperature of 165°F (74°C) and is cooked through.

          Glaze the Chicken: Once cooked, turn the oven to broil and broil the chicken for an additional 3-5 minutes to caramelize the glaze slightly. Keep a close eye to prevent burning.

            Serve: Remove the skillet from the oven. Let the chicken rest for a few minutes. Plate the chicken, spoon extra sauce over it, and garnish with fresh basil leaves. Serve hot with your choice of sides like roasted vegetables or fluffy rice.
