Ingredients

1 cup rolled oats

1 cup almond milk (or any milk of choice)

1 ripe banana, mashed

1 tablespoon maple syrup (or honey)

1 teaspoon vanilla extract

1 teaspoon ground cinnamon

1/4 teaspoon nutmeg

1/4 cup chopped walnuts (optional)

1/4 cup raisins or chocolate chips (optional)

Instructions

In a medium bowl or jar, combine the rolled oats, almond milk, mashed banana, maple syrup, and vanilla extract. Mix well until thoroughly combined.

Add the ground cinnamon, nutmeg, and half of the chopped walnuts (if using). Stir again to incorporate the spices evenly.

If desired, fold in the raisins or chocolate chips to the oat mixture.

Divide the mixture into two servings in jars or bowls and top with the remaining walnuts for added crunch.

Cover the jars or bowls and refrigerate overnight (or at least 4 hours) to allow the oats to soften and absorb the flavors.

In the morning, give the oats a good stir, and if it's too thick, add a splash of milk to loosen it up. Enjoy cold or you can heat it slightly if preferred!
