Ingredients

2 ripe bananas, mashed

8 oz cream cheese, softened

1 cup powdered sugar

1 tsp vanilla extract

1 cup heavy whipping cream

1/2 cup graham cracker crumbs

1/4 cup unsalted butter, melted

1/4 cup brown sugar

1/2 cup chopped walnuts (optional)

Slices of banana and whipped cream for garnish

Instructions

Prepare the crust: In a bowl, combine the graham cracker crumbs, melted butter, brown sugar, and chopped walnuts. Mix well until it resembles wet sand.

Bake the crust: Press the mixture firmly into the bottom of a 9-inch springform pan to create an even layer. Bake in a preheated oven at 350°F (175°C) for 8-10 minutes or until lightly golden. Remove and let cool completely.

Make the filling: In a large mixing bowl, beat the softened cream cheese with a hand mixer until smooth.

Add sugar and flavor: Gradually add the powdered sugar and vanilla extract, mixing until fully incorporated.

Incorporate bananas: Fold in the mashed bananas gently until the mixture is combined and creamy.

Whip the cream: In a separate bowl, whip the heavy cream until stiff peaks form. Carefully fold the whipped cream into the banana mixture, taking care to maintain the airiness.

Assemble the cheesecake: Pour the banana cream mixture over the cooled crust and spread evenly using a spatula.

Chill: Cover the cheesecake with plastic wrap and refrigerate for at least 4 hours, or ideally overnight, to set.

Serve: Once set, carefully remove the cheesecake from the springform pan. Garnish with banana slices and dollops of whipped cream on top.
