For the Cupcakes:

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp baking soda

¼ tsp salt

½ cup unsalted butter, softened

1 cup granulated sugar

2 large eggs

1 tsp vanilla extract

½ cup buttermilk

1 ripe banana, mashed

For the Caramelized Banana Filling:

2 ripe bananas, sliced

2 tbsp unsalted butter

3 tbsp brown sugar

1 tsp cinnamon

1 tbsp lemon juice

For the Banana Pudding Frosting:

1 cup heavy whipping cream

1 cup vanilla pudding (prepared)

1 tsp vanilla extract

Optional: crushed Nilla wafers for topping

Preheat the Oven: Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.

    Make the Cupcake Batter: In a medium bowl, combine flour, baking powder, baking soda, and salt. In a large bowl, cream together the softened butter and granulated sugar until light and fluffy. Add the eggs one at a time, mixing well after each addition, and then stir in the vanilla extract and mashed banana.

      Combine Ingredients: Gradually add the flour mixture to the butter mixture, alternating with the buttermilk until just combined. Do not overmix.

        Bake the Cupcakes: Divide the batter evenly into the lined muffin cups, filling each about 2/3 full. Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean. Allow to cool completely on a wire rack.

          Cook the Caramelized Banana Filling: In a skillet over medium heat, melt the butter. Add sliced bananas, brown sugar, cinnamon, and lemon juice. Cook for about 3-4 minutes or until the bananas are soft and coated in caramel. Remove from heat and let cool.

            Prepare the Frosting: In a mixing bowl, whip the heavy cream until soft peaks form. Gently fold in the prepared vanilla pudding and vanilla extract until fully combined.

              Assemble the Cupcakes: Once cooled, use a small knife or cupcake corer to cut out a small portion of the center of each cupcake. Fill each cupcake with the caramelized banana filling, then pipe the banana pudding frosting on top.

                Decorate: Optionally, sprinkle crushed Nilla wafers on top of the frosting for added texture and crunch.
