Bang Bang Chicken Skewers

1 lb (450g) chicken breast, cut into bite-sized pieces

2 tablespoons cornstarch

2 tablespoons olive oil

1 teaspoon garlic powder

1 teaspoon ginger powder

½ teaspoon paprika

½ teaspoon cayenne pepper (adjust for spiciness)

Salt and pepper to taste

For the Bang Bang Sauce:

½ cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust to taste)

1 teaspoon honey

1 teaspoon lime juice

Chopped green onions (for garnish)

Instructions
 

In a large bowl, combine the chicken pieces with cornstarch, olive oil, garlic powder, ginger powder, paprika, cayenne pepper, salt, and pepper. Toss until the chicken is evenly coated.

    Preheat a grill or grill pan over medium-high heat; if using skewers, soak wooden skewers in water for 30 minutes to prevent burning.

      Thread the chicken pieces onto the skewers, leaving a bit of space between each piece for even cooking.

        Grill the skewers for about 5-7 minutes on each side, or until the chicken is cooked through and has nice grill marks.

          While the chicken is grilling, prepare the Bang Bang sauce by mixing the mayonnaise, sweet chili sauce, sriracha, honey, and lime juice in a bowl until smooth. Adjust the spice level by adding more sriracha if desired.

            Once the chicken skewers are finished grilling, remove them from the heat and let them rest for a couple of minutes.

              Serve the skewers drizzled with Bang Bang sauce or serve the sauce on the side for dipping. Garnish with chopped green onions for an extra touch.
