1 lb (450g) boneless, skinless chicken thighs

1 cup panko breadcrumbs

1/2 cup all-purpose flour

2 large eggs, beaten

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

Salt and pepper to taste

1 cup mayonnaise

3 tablespoons sweet chili sauce

1 tablespoon sriracha (adjust for heat preference)

1 tablespoon lime juice

8 slider buns

1 cup shredded lettuce

1/2 cup sliced cucumbers

Fresh cilantro leaves for garnish

Instructions
 

Prepare the Chicken: Begin by seasoning the chicken thighs with salt, pepper, garlic powder, onion powder, and paprika. Set aside for a few minutes to marinate.

    Set Up Breading Station: In three shallow bowls, place the flour in the first, the beaten eggs in the second, and the panko breadcrumbs in the third.

      Bread the Chicken: Dip each chicken thigh in the flour, coating evenly, then into the beaten eggs, and finally into the panko, pressing down to ensure a good coating.

        Fry the Chicken: Heat about 1/4 inch of oil in a large skillet over medium heat. Once hot, add the breaded chicken thighs and fry for about 4-5 minutes per side or until golden brown and cooked through. Transfer to a paper towel-lined plate to drain excess oil.

          Make the Bang Bang Sauce: In a small bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth. Adjust seasoning or spice level to your taste.

            Assemble the Sliders: Slice the slider buns in half. Spread a generous amount of Bang Bang sauce on the bottom half of each bun. Place a piece of fried chicken on top, followed by shredded lettuce, sliced cucumbers, and a sprinkle of fresh cilantro.

              Finish and Serve: Cap the sliders with the top half of the buns, drizzle a little more Bang Bang sauce on top if desired, and serve with extra sauce on the side for dipping.
