Ingredients

4 salmon fillets (6 ounces each)

Salt and pepper to taste

1 tablespoon olive oil

1 cup Panko breadcrumbs

1/2 teaspoon garlic powder

1/4 teaspoon paprika

1/4 teaspoon cayenne pepper (adjust for spice preference)

1/3 cup mayonnaise

2 tablespoons sweet chili sauce

1 tablespoon Sriracha (optional, for extra heat)

1 tablespoon lime juice

Fresh cilantro, chopped (for garnish)

Instructions

Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.

Season the salmon fillets on both sides with salt and pepper.

In a bowl, combine Panko breadcrumbs, garlic powder, paprika, and cayenne pepper. Mix well to ensure the breadcrumbs are evenly coated with the spices.

Heat olive oil in a medium skillet over medium heat. Add the Panko mixture and cook until golden brown, stirring frequently for about 3-5 minutes. Remove from heat and let cool slightly.

In a separate bowl, whisk together mayonnaise, sweet chili sauce, Sriracha (if using), and lime juice until smooth. This will be your Bang Bang sauce!

Place the salmon fillets on the prepared baking sheet. Spread a generous layer of the Bang Bang sauce over each fillet. Sprinkle the toasted Panko mixture over the salmon, pressing lightly to adhere.

Bake the salmon in the preheated oven for about 15-18 minutes, or until the salmon is cooked through and flakes easily with a fork.

Remove from the oven and let it rest for a couple of minutes before serving.

Garnish with freshly chopped cilantro before serving.
