1 lb large shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1 teaspoon garlic powder

1 teaspoon onion powder

1 teaspoon paprika

½ teaspoon cayenne pepper (adjust for heat preference)

Salt and pepper to taste

½ cup mayonnaise

¼ cup sweet chili sauce

1 tablespoon sriracha (optional)

2 tablespoons green onions, finely sliced (for garnish)

Oil for frying

Marinate the Shrimp: In a bowl, soak the cleaned shrimp in buttermilk for at least 30 minutes. This will tenderize the shrimp and add flavor.

    Prepare the Coating: In a separate large bowl, combine flour, garlic powder, onion powder, paprika, cayenne pepper, salt, and pepper. Mix well to create a seasoned flour mixture.

      Coat the Shrimp: Remove shrimp from buttermilk, allowing excess to drip off, then dip the shrimp into the seasoned flour, ensuring they are well-coated. Shake off any excess flour.

        Heat the Oil: In a deep pan or fryer, heat oil to 350°F (175°C). You need enough oil to submerge the shrimp for even frying.

          Fry the Shrimp: Fry the shrimp in batches, being careful not to overcrowd the pan. Cook for about 2-3 minutes until they turn golden brown and crispy. Remove and place on a paper towel-lined plate to absorb excess oil.

            Make the Bang Bang Sauce: In a mixing bowl, combine mayonnaise, sweet chili sauce, and sriracha (if using). Stir until well blended, adjusting spiciness to your liking.

              Toss the Shrimp: Place the fried shrimp in a large bowl, drizzle the Bang Bang sauce over them, and gently toss until all shrimp are evenly coated.

                Garnish and Serve: Transfer the coated shrimp to a serving platter, garnish with sliced green onions, and serve immediately.
