1 lb shrimp, peeled and deveined

1 cup buttermilk

1 cup all-purpose flour

1/2 cup cornstarch

1 teaspoon garlic powder

1 teaspoon paprika

1/2 teaspoon cayenne pepper

Salt and pepper to taste

Vegetable oil for frying

1/2 cup mayonnaise

1 tablespoon sweet chili sauce

1 tablespoon sriracha (adjust for spice)

1 teaspoon lime juice

Chopped scallions for garnish

Sesame seeds for garnish

Marinate the Shrimp: In a bowl, pour the buttermilk over the shrimp, ensuring they're well coated. Cover and refrigerate for at least 30 minutes to allow flavors to penetrate.

    Prepare the Breading: In a separate bowl, mix the flour, cornstarch, garlic powder, paprika, cayenne pepper, salt, and pepper together.

      Heat the Oil: In a large frying pan, heat about 1-inch deep of vegetable oil over medium-high heat. Once the oil shimmers, it’s ready for frying.

        Coat the Shrimp: Remove the shrimp from the buttermilk and let any excess drip off. Dredge each shrimp in the prepared flour mixture, shaking off any excess.

          Fry the Shrimp: Carefully place the shrimp in the hot oil in batches. Fry for about 2-3 minutes on each side or until golden brown. Remove and drain on a paper towel-lined plate.

            Make the Bang Bang Sauce: In a separate bowl, combine the mayonnaise, sweet chili sauce, sriracha, and lime juice. Mix well until smooth. Adjust the spice level by adding more sriracha if desired.

              Toss the Shrimp: In a clean bowl, combine the fried shrimp with about half of the bang bang sauce, tossing gently to coat thoroughly.

                Serve: Plate the shrimp and drizzle the remaining sauce on top for added flavor. Sprinkle with chopped scallions and sesame seeds for garnish.
