1 pound Yukon gold potatoes, peeled and chopped

½ cup milk

4 tablespoons unsalted butter

Salt and pepper to taste

1 tablespoon olive oil

1 medium onion, thinly sliced

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

1 tablespoon Worcestershire sauce

1 cup beef or vegetable broth

Fresh parsley, chopped, for garnish

Cook the Sausages: In a large skillet, heat the olive oil over medium heat. Add the sausages and cook until browned on all sides, about 8-10 minutes. Remove the sausages and set them aside.

    Prepare the Mashed Potatoes: While the sausages are cooking, bring a large pot of salted water to a boil. Add the chopped potatoes and cook until fork-tender, about 15-20 minutes. Drain and return the potatoes to the pot. Add milk, butter, salt, and pepper. Mash until smooth and creamy. Set aside.

      Make the Onion Gravy: In the same skillet used for the sausages, add the sliced onions and cook over medium heat until they are caramelized and golden brown, about 10 minutes. Add the thyme and Worcestershire sauce, stirring to combine.

        Combine and Simmer: Pour the beef or vegetable broth into the skillet, stirring to mix. Return the sausages to the skillet and let everything simmer together for about 5 minutes, allowing the flavors to meld. Season with salt and pepper to taste.
