6 pork sausages (or your choice of sausages)

4 large potatoes, peeled and quartered

1/2 cup whole milk

4 tablespoons butter

Salt and pepper to taste

2 large onions, thinly sliced

2 tablespoons all-purpose flour

2 cups beef or vegetable broth

1 teaspoon Worcestershire sauce

Fresh parsley, chopped for garnish

Cook the Potatoes: In a large pot, add the quartered potatoes and cover them with cold water. Add a generous pinch of salt. Bring to a boil and simmer for 15-20 minutes or until tender when pierced with a fork.

    Cook the Sausages: While the potatoes are cooking, heat a skillet over medium heat and add the sausages. Cook them for about 10-12 minutes, turning occasionally until they are browned and cooked through. Remove from the skillet and set aside.

      Make the Onion Gravy: In the same skillet, add sliced onions and cook over medium heat for about 5-7 minutes until they soften. Sprinkle the flour over the onions and stir continuously for about 1-2 minutes. Gradually pour in the broth and Worcestershire sauce, stirring well to combine. Allow the gravy to simmer for about 5-10 minutes until it thickens. Season with salt and pepper.

        Mash the Potatoes: Once the potatoes are cooked, drain and return them to the pot. Add the butter and milk, then mash until smooth and creamy. Season with salt and pepper to taste.

          Assemble the Dish: Place a generous scoop of mashed potatoes on each plate. Lay the sausages on top and pour the onion gravy generously over them.
