6 high-quality sausages (pork or chicken)

2 pounds russet potatoes, peeled and cubed

1 cup whole milk

4 tablespoons unsalted butter

Salt and pepper, to taste

1 large onion, thinly sliced

1 tablespoon olive oil

2 tablespoons all-purpose flour

2 cups beef broth

1 teaspoon Worcestershire sauce

1 teaspoon Dijon mustard

Fresh parsley, chopped (for garnish)

Cook the Potatoes: In a large pot, cover the cubed potatoes with cold water, add a pinch of salt, and bring to a boil. Cook for 15-20 minutes, or until fork-tender. Drain and return to the pot.

    Prepare the Sausages: While the potatoes are cooking, heat a large skillet over medium heat and add the sausages. Cook for about 12-15 minutes, turning occasionally until browned and cooked through. Remove from skillet and let rest.

      Make the Mashed Potatoes: To the drained potatoes, add the whole milk, 2 tablespoons of butter, and salt and pepper to taste. Mash until creamy and smooth. Cover to keep warm.

        Onion Gravy: In the same skillet used for the sausages, add olive oil over medium heat. Add the sliced onions and cook until soft and caramelized, about 10-15 minutes. Stir in the flour and cook for 2 minutes.

          Add Broth and Seasonings: Gradually add the beef broth, stirring constantly to avoid lumps. Bring to a simmer and add Worcestershire sauce and Dijon mustard. Cook for another 5 minutes until thickened. Season with salt and pepper to taste.
