Ingredients
  

1 pound large shrimp, peeled and deveined

8 slices of bacon

1 ripe peach, diced into chunks

1/2 cup BBQ sauce

1/4 cup sweet chili sauce

2 tablespoons olive oil

1 tablespoon fresh lime juice

1 teaspoon garlic powder

1 teaspoon smoked paprika

Salt and pepper to taste

Skewers (if using bamboo, soak them in water for 30 minutes)

Instructions
 

Preheat the Grill: Preheat your grill to medium heat (about 350°F/175°C). If using a charcoal grill, prepare for indirect heat.

    Marinate the Shrimp: In a bowl, combine the BBQ sauce, sweet chili sauce, olive oil, lime juice, garlic powder, smoked paprika, salt, and pepper. Add the shrimp to the marinade and toss to coat. Let the shrimp marinate for at least 15-30 minutes.

      Prepare the Bacon: While the shrimp is marinating, pre-cook the bacon in a skillet over medium heat for about 3-4 minutes, just until it starts to render fat but is not fully crispy. Remove from heat and let it cool slightly.

        Assemble the Kabobs: On each skewer, thread shrimp, followed by a chunk of peach, then wrap a half-slice of bacon around the shrimp and peach. Repeat until the skewer is filled, leaving a little space between each ingredient for even cooking.

          Grill the Kabobs: Place the assembled kabobs on the grill. Cook for about 2-3 minutes per side, brushing them occasionally with any remaining marinade, until the shrimp turn pink and opaque, and the bacon is crispy.

            Serve: Once cooked, remove from the grill and let them rest for a minute. Serve the kabobs hot with extra BBQ and sweet chili sauce on the side for dipping.
