1 can (400g) of mixed beans (kidney, black, and cannellini), drained and rinsed

1 tablespoon olive oil

1 small onion, finely chopped

2 cloves garlic, minced

1 teaspoon smoked paprika

1 teaspoon ground cumin

1/2 teaspoon chili flakes (adjust to taste)

1 tablespoon tomato paste

1 cup vegetable broth

Salt and pepper, to taste

4 slices of thick-cut whole-grain bread

Fresh cilantro or parsley, chopped (for garnish)

Optional: A dollop of sour cream or Greek yogurt for serving
