2 lbs beef chuck, cut into 1.5-inch cubes

4 slices of thick-cut bacon, diced

2 cups beef broth

2 cups carrots, sliced into 1-inch pieces

1 large onion, chopped

3 cloves garlic, minced

2 tablespoons tomato paste

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

2 bay leaves

1 cup button mushrooms, quartered

2 tablespoons all-purpose flour

3 tablespoons olive oil

Salt and pepper, to taste

Fresh parsley, chopped (for garnish)

Instructions
 

In a large Dutch oven, heat 2 tablespoons of olive oil over medium heat. Add the diced bacon and cook until crispy. Remove the bacon with a slotted spoon and set aside, leaving the drippings in the pot.

    Increase the heat to medium-high, then brown the beef cubes in batches. Season with salt and pepper as you cook. Once browned, remove and set aside.

      In the same pot, add the chopped onion and garlic. Sauté until the onion is translucent, about 5 minutes.

        Stir in the tomato paste and cook for an additional minute. Then sprinkle the flour over the mixture, stirring well to combine.

          Gradually pour in the beef broth while stirring to avoid lumps. Add the thyme, bay leaves, and browned beef back into the pot.

            Bring the mixture to a gentle boil, then reduce the heat to low. Cover and let it simmer for 1.5 - 2 hours, stirring occasionally.

              Add the carrots and mushrooms to the pot, stirring gently. Return the lid and continue to cook for another 30 minutes, until the vegetables and beef are tender.

                Taste and adjust seasoning if necessary. Remove the bay leaves before serving.

                  Serve hot, garnished with fresh parsley.
