Ingredients

1 cup beef, minced

1 cup ricotta cheese

1/2 cup grated Parmesan cheese

1 cup all-purpose flour

1 large egg

1 teaspoon salt

1/4 teaspoon black pepper

1/2 teaspoon garlic powder

1 cup marinara sauce

Fresh basil leaves for garnish

Olive oil for frying

Instructions

In a medium frying pan, heat a drizzle of olive oil over medium heat. Add the minced beef, seasoning it with salt, pepper, and garlic powder. Cook until browned, about 5-7 minutes.

Once cooked, remove the beef from heat and allow it to cool slightly. In a bowl, combine the beef, ricotta cheese, and half of the grated Parmesan. Mix well and set aside.

In a separate bowl, make the pasta dough by mixing the flour, egg, and a pinch of salt. Knead until the dough is smooth and elastic, about 5 minutes. Wrap in plastic wrap and let rest for 20 minutes.

Divide the dough into quarters. Roll out one piece at a time on a floured surface until thin (about 1/8 inch thick). Cut into 3-inch squares.

Place a teaspoon of the beef and cheese mixture in the center of each square. Fold the dough over to create a triangle shape and press the edges to seal tightly.

Bring the two corners of the triangle together to form the tortellini shape, pinching to secure them. Repeat with the remaining dough and filling.

In a large pot, bring salted water to a boil. Carefully add the tortellini and cook for about 3-4 minutes, or until they float to the surface. Remove them with a slotted spoon.

In a saucepan, heat the marinara sauce over medium heat. Add the cooked tortellini and toss gently to coat.

Plate the tortellini and sprinkle with remaining Parmesan cheese and fresh basil leaves for garnish.
