Ingredients

1 pound beef sirloin, thinly sliced into strips

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 ounces mushrooms, sliced (cremini or button)

1 cup beef broth

1 tablespoon Worcestershire sauce

1 teaspoon Dijon mustard

1 cup sour cream

Salt and pepper to taste

12 ounces egg noodles

Fresh parsley, chopped (for garnish)

Instructions

Cook the Noodles: In a large pot, bring salted water to a boil. Add egg noodles and cook according to package instructions until al dente. Drain and set aside.

Sauté the Beef: In a large skillet over medium-high heat, heat the olive oil. Add the beef strips, seasoning them with salt and pepper. Sear the beef for about 2-3 minutes until browned but not fully cooked. Remove the beef from the skillet and set aside.

Cook the Vegetables: In the same skillet, add the chopped onion and sauté for 3-4 minutes until softened. Add the minced garlic and sliced mushrooms, cooking for an additional 4-5 minutes until the mushrooms are tender and browned.

Make the Sauce: Pour in the beef broth, Worcestershire sauce, and Dijon mustard. Stir well, bringing the mixture to a gentle simmer. Allow it to cook for about 5 minutes to let the flavors meld together.

Bring it Together: Reduce the heat to low and stir in the sour cream until smooth. Add the sautéed beef back into the skillet, ensuring it is well coated in the creamy sauce. Let it simmer for another 3-5 minutes until the beef is cooked through and the sauce thickens slightly. Adjust seasoning with salt and pepper if necessary.

Serve: Divide the cooked egg noodles onto plates or bowls. Spoon the beef stroganoff over the noodles, garnishing with fresh chopped parsley for a burst of color and flavor.
