2 lbs beef tips (cubed sirloin or stew meat)

1 medium onion, diced

2 cloves garlic, minced

1 cup beef broth

1 cup mushroom soup (condensed)

1 cup sliced mushrooms (fresh or canned)

2 tablespoons Worcestershire sauce

2 tablespoons soy sauce

1 teaspoon dried thyme

1 teaspoon black pepper

½ teaspoon salt (adjust to taste)

2 tablespoons olive oil

2 tablespoons cornstarch mixed with 2 tablespoons cold water (for thickening, optional)

Fresh parsley for garnish (optional)

Instructions
 

Stove Top Method:

    Sear the Beef: In a large skillet or pot, heat the olive oil over medium-high heat. Add the cubed beef tips and sear until browned on all sides (about 5-7 minutes). Remove from the pan and set aside.

      Sauté Vegetables: In the same pan, add the diced onion and sauté until translucent (about 3-4 minutes). Add minced garlic and cook for an additional minute until fragrant.

        Combine Ingredients: Return the beef tips to the pot. Stir in the beef broth, mushroom soup, sliced mushrooms, Worcestershire sauce, soy sauce, dried thyme, black pepper, and salt.

          Simmer: Bring the mixture to a boil, then reduce the heat to low. Cover and let it simmer for 45 minutes, stirring occasionally.

            Thicken the Gravy: If you prefer a thicker gravy, mix cornstarch with cold water and stir it into the pot. Let it simmer for an additional 5-10 minutes until thickened.

              Serve: Taste and adjust seasoning as necessary. Serve the beef tips and gravy over rice, egg noodles, or mashed potatoes, garnished with fresh parsley if desired.

                Crock Pot Method:

                  Prepare Ingredients: In a skillet over medium-high heat, brown the beef tips in olive oil for about 5-7 minutes. Remove and set aside.

                    Sauté Onion & Garlic: In the same skillet, sauté the diced onion until translucent (3-4 minutes) and add minced garlic for an additional minute.

                      Fill the Crock Pot: Transfer the browned beef tips and sautéed vegetables to the crock pot. Add the beef broth, mushroom soup, sliced mushrooms, Worcestershire sauce, soy sauce, dried thyme, black pepper, and salt. Stir to combine.

                        Cook: Cover and cook on low for 6-8 hours or on high for 3-4 hours until the beef is tender.

                          Thicken Gravy: If desired, about 30 minutes before serving, mix cornstarch with cold water and stir it into the crock pot. Allow to cook uncovered to thicken.

                            Serve: Taste and adjust seasoning. Serve over your choice of sides, garnished with fresh parsley if desired.
