1.5 lbs beef sirloin, cut into 1-inch cubes

2 tablespoons olive oil

1 medium onion, finely chopped

2 cloves garlic, minced

8 oz cremini mushrooms, sliced

2 cups beef broth

2 tablespoons Worcestershire sauce

1 tablespoon soy sauce

1 tablespoon cornstarch (optional, for thickening)

1 tablespoon fresh thyme leaves (or 1 teaspoon dried thyme)

Salt and pepper to taste

Fresh parsley, chopped (for garnish)

Heat olive oil in a large skillet over medium-high heat. Once hot, add the beef tips and sear until they are browned on all sides, about 5-7 minutes. Remove the beef from the skillet and set aside.

    In the same skillet, reduce heat to medium and add the chopped onion. Sauté until translucent, about 3-4 minutes. Add in the minced garlic and sliced mushrooms, cooking until the mushrooms are tender and any liquid released has evaporated, about 5 minutes.

      Return the seared beef tips to the skillet, stirring to combine with the onion and mushrooms.

        Pour in the beef broth, Worcestershire sauce, soy sauce, and thyme. Stir well and bring the mixture to a gentle simmer.

          Cover the skillet and let it simmer for 20-25 minutes, allowing the beef to become tender and absorb the flavors.

            If you prefer a thicker gravy, combine cornstarch with 2 tablespoons of water to create a slurry and stir it into the skillet. Allow it to cook for an additional 5 minutes, stirring occasionally until the gravy thickens.

              Season the dish with salt and pepper to taste.

                Remove from heat and garnish with chopped fresh parsley before serving.
